Summer is over and I have to gear up for school and activities. I am not big on panicking at 4 pm to see what I am going to feed the kids by 5 pm. Okay, my plan is to get out of that habit! It feels like by Thursday I am just about done. What am I going to feed the kids? I have been daydreaming about pulling out my slow cooker and freezer meals.
Slow cooker is okay but it seems like everything turns to mush. Or, it doesn’t look appealing. I think I need new recipes. Also, I like to think of the slow cooker for something to use for soups more when the weather turns to a chill. In San Jose, we are still in the upper 80’s and 90’s.
The other mode of cooking I am looking at is freezer meals. Freezer meals seems like it takes a lot of preparing and spending an entire Sunday, messing up the kitchen and well you get the point.
Last week I was hanging with my friend Hannah. Hannah has three lovely kiddos and she has this party planning and cooking down to a science. I asked her what she freezes… She said fried chicken. I kind of laughed because I love fried chicken but not big on frying. Well to be honest with you it’s the mess. In a small medium frying pan and everything splatters everywhere. Especially if I have one of those nets over it. Once I left that off I do the ouch dance.
Hannah told me her secret is not in the frying pan but in the large Pasta pot. Since I trust Hannah when it comes to anything cooking. I tried it.
I found the perfect fried chicken recipe at In The Kitchen with Polly. In The Kitchen with Polly is her mother’s cooking blog. I pulled out my large pasta pot and poured in the vegetable oil, heated it up and started frying those babies (chicken drumsticks.) The only thing I do not own in my house is the candy thermometer. I am thinking yes, since I know the secret to frying I am going to be making french fries this week for those kiddos.
Wow, I am pretty impressed I fried up 24 drumsticks. Pat myself on the back (BIG ACCOMPLISHMENT.) The kiddos are getting them with their lunches and yesterday a friend came over with three kids and I sent her home with dinner. Nice!
